

Celebration of Chef Oussama on Labor Day
On this International Labor Day, we honor the hands and hearts that make our riad and Fez Cooking School a warm, welcoming, and inspiring place. Today, we celebrate the remarkable journey of one of our own. Chef Oussama, whose story embodies growth, dedication, and quiet ambition.
Oussama first joined us as a trainee, stepping into our kitchen with curiosity and a willingness to learn. From washing vegetables to assisting with traditional Moroccan dishes, his presence quickly became an integral part of our team. His love for cooking was clear. However what stood out even more was his calm and steady determination.
It was 2019 when we first sat down with him for an interview. When we asked, “Where do you imagine yourself in five years?” he smiled shyly and replied, “I don’t know what awaits me in the future.” At the time, it felt like a simple, honest answer but looking back now, it almost feels prophetic. Because what awaited him was growth, mastery, and a deepening love for the cuisine of his culture.
The Transformation from a simple trainee to a head Chef
Over the years, Oussama worked tirelessly, absorbing every flavor, mastering every spice, and pouring his heart into every dish. His curiosity and dedication caught everyone’s attention, and he slowly moved from preparing ingredients to leading cooking classes. His understanding of Moroccan cuisine isn’t just technical but it’s emotional.
Today, we are proud to call him the head chef of our Fez Cooking School. He is now responsible for guiding others, just as he was once guided. He leads our culinary experiences with passion and authenticity. Chef Oussama teaches travelers from all over the world the beauty of Moroccan cuisine. His tajines are unforgettable, his energy is contagious, and his connection to the Medina, where he has always lived , grounds everything he creates.
The narrow alleys, the smell of spices, the rhythm of local life — they inspire his cooking and keep him close to his roots. He often says, “ cooking here is not just about food; it’s about story, tradition, and people.”
As we mark Labor Day, we thank Chef Oussama and every member of our team for bringing life, love, and meaning to the work we do every day.
